can anyone tell me if 15x7" wheels (Im looking at getting a new set of wheels they will have ford f100 offset) with 215/75 15 tyres will rub with a 2" lift on a Jimny.

nar they'll fit well. with 30 inch tires they could rub on the back edge of the bumper or the back edge of the flairs.
depending on tire choice the tires might stick out a little as well.

but they won't rub on anything metal
